Ingredients
Cake
- 2 cups Guinness
- 2 cups butter
- 1 1/2 cups cocoa butter
- 4 cups flour
- 4 cups white sugar
- 7 tablespoons baking soda
- 1 1/2 teaspoons salt
- 4 large eggs
- 1 1/3 cups sour cream
Icing
- 2 packages cream cheese (8oz)
- 8 cups powdered sugar
- 8 tablespoons butter
- 8-12 tablespoons Bailey's
Directions
Cake
- Mix Guinness and butter in saucepan and simmer. Add cocoa and wisk together.
- In bowl, sift flour, sugar, baking soda, and salt.
- In separate bowl, beat eggs and sour cream.
- Combine two wet mixtures together, mix in dry ingredients, and beat on low until smooth.
- Pour into 9 inch round pan (will fill 2 pans) and bake for 35 minutes. If desired, mixture can be used to make 48 cupcakes instead and should be baked for 15-18 minutes.
Icing
- Combine all ingredients and beat until smooth. For best results, soften cream cheese and butter prior to use.
