Guiness Chocolate Cake

Ingredients

Cake

  • 2 cups Guinness
  • 2 cups butter
  • 1 1/2 cups cocoa butter
  • 4 cups flour
  • 4 cups white sugar
  • 7 tablespoons baking soda
  • 1 1/2 teaspoons salt
  • 4 large eggs
  • 1 1/3 cups sour cream

Icing

  • 2 packages cream cheese (8oz)
  • 8 cups powdered sugar
  • 8 tablespoons butter
  • 8-12 tablespoons Bailey's

 

Directions

Cake

  1. Mix Guinness and butter in saucepan and simmer. Add cocoa and wisk together. 
  2. In bowl, sift flour, sugar, baking soda, and salt. 
  3. In separate bowl, beat eggs and sour cream. 
  4. Combine two wet mixtures together, mix in dry ingredients, and beat on low until smooth. 
  5. Pour into 9 inch round pan (will fill 2 pans) and bake for 35 minutes. If desired, mixture can be used to make 48 cupcakes instead and should be baked for 15-18 minutes. 

Icing

  1. Combine all ingredients and beat until smooth. For best results, soften cream cheese and butter prior to use.
